Rooted in the Japanese philosophy of “ichigo ichie”, a once-in-a-lifetime moment, YŪGIN is designed to be unrepeatable, fleeting, and deeply personal. Each evening is an ephemeral performance, where no menu is ever the same, and no moment is ever recreated.
This is omakase as an immersion – a quiet escape from the outside world into something more intentional, more intimate, and entirely unforgettable.
My journey began far from Japan, in the Republic of Moldova. Drawn to the elegance and discipline of Japanese cuisine, I found my way to a legendary sushi master, whose mentorship transformed my fascination into my life’s calling. After a decade trained in the classical traditions and sharpened by years of global exploration, I’ve refined a style that’s rooted in precision, that still evolves and challenges me. With every dish, I continue the pursuit of excellence, not for acclaim, but for the love of the craft.
